June/July Meals postponed

Just to let you all know that I will be posting June and July meals when we get back from our big adventurous vacation (wouldn't want the whole world to know when and for how long we will be gone for).  My motto in the summer is, Keep It Simple.  We try to eat as fresh as we can and also try to grill out as much as we can.  If you have any great summer recipes, please pass them along.  You all know, I love to try new recipes.  Have a wonderful summer and make sure you check back in July to see where our adventurous vacation took us.  Bye for now!

May meals

As I am typing this, we only have 4 weeks of school left.  20 DAYS.  Whoa this year flew by.  Our big vacation countdown has begun.  More on that in later posts.  Here are Mays meals...

Beef Strogenoff by Joy Belt

1lbs ground beef
1 medium onion
1 can cream of mushroom soup
1 cup sour cream
1 can beef broth
1/2 cup water
3 cups uncooked noodles (I use egg noodles)
In skillet brown beef and cook onion until tender. Drain and blend all ingredients into pan. Bring to a boil, reduce heat. Cover and simmer for 10 min or until noodles are done. Stir often

Cheesy chicken noodle casserole by Anna

1 box spaghetti noodles
1 jar of cheese wiz
4 cooked boneless skinless chicken breasts cubed
2 cans of cream of chicken soup
crushed saltine crackers or bread crumbs for top

Cook chicken and cube. Cook noodles and drain. Combine cheese wiz and cream of chicken soup and warm on stove. Stir cheese mixture into noodles and combine everything into casserole dish. Top with crushed crackers or bread crumbs. Bake at 350 until warm and bubbling.

Lasagna by Joy Belt
1lb ground beef
1 15 oz jar of spaghetti sauce
1/2 tsp oregano
1/2 box lasagna noodles
6 oz mozzarella cheese
1 cup cottage cheese-I use 1 cup ricotta cheese
Brown ground beef in pan and drain.  Mix sauce oregano, cottage cheese (or ricotta cheese), and meat.  Layer ingredients.  Bake at 350 for 45-50 minutes.  Add cheese to top and cook about 5-10 min longer.
